A Seven Year process
Gently pressed, destemmed grapes from Edna Valley vineyards enter our traditional alembic copper pot stills, twice-run for purity and balance. The spirit rests undisturbed for seven years in French oak.
This process preserves the delicate aromatics of Pinot Noir, the structure of Zinfandel, and the floral lift of Muscat. Long barrel aging softens the edges, draws out dried fruit, resin, and spice—concentrating the spirit into its final undiluted form.
